Smoko Recipe of the Month: Builders' fritty

This is a super easy smoko idea that you can basically throw together with anything you've got left over in the fridge. All you need is a cake tin or some similar sort of dish, various veges, cheese, meat and lots of eggs.


12 eggs

Whatever vegetables you have in the fridge (left over spuds, kumara, pumpkin, onion tomatoes and spinach work well).

Cheese (feta is good)

Meat of choice (couple of slices of bacon, left over sausage or equivalent)

Dash of milk

Salt and pepper


Brown onion and bacon. Cut cooked veges into bite sized bits. Whisk up 12 eggs with about half a cup of milk and season. Chuck it all into a dish, sprinkle some cheese over, cook for about 30 mins at 180degrees or until a skewer comes out clean!


Slice her up and enjoy.
